1 Lb. Fresh sweet potatoes- diced ½ inch
¼ Cup Olive Oil
¼ Cup Sliced Green onion whites
¼ Cup Sliced Green onion tops
1 Teaspoon Paprika
To Taste Black Pepper
To Taste Salt
2 Tablespoons Freshly Sliced Garlic Chives
Blanch the sweet potatoes in water until just fork tender.
Heat the oil over medium heat and add the green onion whites.
Cook until slightly browned. Add the sweet potatoes and onion tops.
Toss gently until potatoes are browned. Season with spices.
Garnish with garlic chives.
