Braised Cucumbers (Gherkins)
Serves: 6
Time ~15 minutes
Ingredients:
1½ Tbl butter
1 leek, white and tender green parts, diced and well washed (onion works, too)
6 cucumbers, peeled, halved lengthwise and sliced ½ inch thick
(8-10 gherkins, halved lengthwise and sliced ½ inch thick, no need to peel)
Coarse salt to taste
Fresh dill, snipped (optional)
Directions
In a large skillet, melt 1 Tbl of the butter over medium-low heat.
Add the leek and cook, stirring occasionally until the leek is tender, 3-5 minutes.
Add the cucumbers, season with salt and toss to coat.
Add ¼ cup of water and the remaining ½ Tbl butter and cover the pan. Cook 3 minutes or until the cucumbers are crisp-tender.
Uncover the pan, raise the heat to medium, add the dill (if using) and cook until the liquid has almost evaporated, 2 to 3 minutes more.
