Heirloom Tomato and Thai Basil Salad

Serves: 4

Time:  20 minutes


  • 2 lb Heirloom Tomatoes,

  • ½ cup Packed, fresh basil leaves

  • ⅓ cup Very Finely Sliced Red Onion

  • 1½ tsp Minced Garlic

  • 1½ Tbsp Balsamic Vinegar

  • 1½ Tbsp Extra Virgin Olive Oil

  • ½ cup Crumbled Goat Cheese

  • Sea Salt & Freshly Ground Black Pepper


  1. Cut the tomatoes into bite-sized wedges and gently use your thumb to remove as many seeds as you easily can (seed removal optional). Add the tomato wedges to a serving bowl and toss them with the basil leaves and onion slices.

  2. Just before serving, combine the garlic with the vinegar and oil and toss this mixture into the salad. Season generously with sea salt and freshly ground black pepper. Sprinkle the goat cheese on top, and serve immediately.
