Marinated Cherry Tomato and Herb Salad

Serves: 4

Time 2.5 hours


2 cups (1 pint) cherry or grape tomatoes

2 Tbl olive oil

2 Tbl balsamic vinegar

1 Tbl fresh basil

1 Tsp minced Fresh rosemary

Salt and freshly ground black pepper


  1. Cut tomatoes in half and add to bowl.

  2. Combine olive oil, vinegar, and fresh herbs and pour over tomatoes; stir to combine

  3. Cover and refrigerate for at least 2 hours and up to 24 hours.

  4. Stir before serving, and add salt and pepper to taste.

Turn it into Bruschetta. Simply cut the tomatoes into smaller pieces before marinating. Spoon it onto toasted slices of a baguette.

No need to follow the recipe precisely. I like adding garlic and some type of cheese (parmesan/mozzarella/feta/goat)
