Thai Basil Pesto
Serves: 4 (1/2 cup)
Time ~10 minutes
2 Cups Thai Basil Leaves (some stems are fine too)
3 Tbs plain roasted peanuts
1 Tbs honey
1 Tbs rice wine vinegar (or another white vinegar)
2 Tbs sesame oil
3 clobes garlic
½ Tsp red pepper flakes
½ Tsp low sodium soy sauce
Combine all ingredients in a food processor and puree to the consistency you like.
This easy Thai basil pesto is a healthy way to Thai-i-fy noodles, rice, tofu and veggies in a hurry.
