Carrot Top Pesto

Serves: 4

Time 20 minutes


  • 1 bu carrot tops

  • 3 Tbsp nuts (pecans, pine nuts, almonds, etc)

  • 1 clove garlic

  • ~1/2 cup olive oil

  • Salt to taste


Above ingredients provide a nice base but feel free to experiment!

  • Add ½ cup other fresh greens or herbs

  • Parmesan cheese to taste

  • Chopped Jalapeno/Crushed red pepper


  1. In a food processor, combine all of the ingredients minus the olive oil. Begin to blend while slowly adding in the olive oil until the mixture reaches your desired consistency.

  2. Serve over toast, mixed in with pasta, as a dip for chips, and ENJOY!!
